Ingredients

  • 400 grams Fettuccine pasta
  • 120 grams Sun-dried tomatoes (packed in oil)
  • 2 tablespoons Olive oil
  • 3 Garlic cloves
  • 250 milliliters Heavy cream
  • 50 grams Grated Parmesan cheese
  • 10 Fresh basil leaves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Freshly ground black pepper
  • 120 milliliters Pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine according to the package instructions until al dente. Reserve 120 milliliters (½ cup) of pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta cooks, finely chop the sun-dried tomatoes and peel and mince the garlic cloves.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant but not browned.

Add the chopped sun-dried tomatoes to the skillet and cook for another 2 minutes, stirring frequently.
