Ingredients

  • 12 ounces Fettuccine
  • 6 tablespoons Unsalted butter
  • 12 leaves Fresh sage leaves
  • 6 slices Bacon
  • 14 ounces Marinated artichoke hearts, drained and quartered
  • 2 cloves Garlic, minced
  • 1 cup Parmesan cheese, freshly grated
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 4 quarts Water (for cooking pasta)
  • 1 tablespoon Salt (for pasta water)

Directions

Step 1

Bring 4 quarts of water to a boil in a large pot. Add 1 tablespoon of salt to the boiling water, then cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set it aside.

Step 2

In a large skillet over medium heat, cook the bacon slices until crispy, about 6-8 minutes, flipping halfway. Transfer the cooked bacon to a paper towel-lined plate to drain, then chop into bite-sized pieces.

Step 3

Discard all but 2 tablespoons of bacon fat from the skillet. Return the skillet to medium heat and add the butter. Allow the butter to melt and become foamy, then add the sage leaves. Cook the sage for 1-2 minutes or until crisp and aromatic. Remove the sage leaves from the skillet and set aside for garnish.
