Ingredients

  • 12 ounces Fettuccine pasta
  • 1 cup Raw walnuts
  • 3 ounces Parmesan cheese, grated
  • 2 medium Garlic cloves
  • 2 tablespoons Fresh lemon juice
  • 3 tablespoons Olive oil
  • 1 cup Water
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions, typically about 10-12 minutes for al dente.

Step 2

While the pasta cooks, prepare the no-cook walnut Alfredo sauce. In a blender or food processor, combine raw walnuts, grated Parmesan cheese, garlic cloves, fresh lemon juice, olive oil, water, salt, and black pepper.

Step 3

Blend the mixture until it is smooth and creamy, pausing to scrape down the sides of the blender as needed. Adjust seasoning with additional salt or pepper to taste.

Step 4

Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water and then drain the pasta.

Step 5

Return the drained fettuccine to the pot. Pour the walnut Alfredo sauce over the pasta, and toss to coat evenly. Add a splash of reserved pasta water as needed to loosen the sauce and achieve the desired consistency.

Step 6

Divide the pasta among serving plates. Garnish with chopped fresh parsley, if desired, for a fresh burst of flavor and color.

Step 7

Serve immediately and enjoy this creamy, nutty Alfredo dish!
