Ingredients

  • 12 ounces fettuccine pasta
  • 8 ounces Italian sausage (mild or spicy)
  • 2 tablespoons olive oil
  • 3 units garlic cloves, minced
  • 14 ounces canned crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup black olives, sliced
  • 0.5 teaspoons red pepper flakes
  • 1 teaspoons dried basil
  • 1 teaspoons dried oregano
  • 0.5 cup parmesan cheese, grated (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Remove the casing from the Italian sausage and crumble the sausage into the hot skillet. Cook the sausage, stirring frequently, until browned and fully cooked, about 7-8 minutes. Remove the sausage from the skillet and set aside on a plate.

Step 4

Using the same skillet, add the minced garlic and cook for 1 minute until fragrant.

Step 5

Stir in the canned crushed tomatoes, tomato paste, dried basil, dried oregano, and red pepper flakes. Simmer the sauce for 8-10 minutes, stirring occasionally.

Step 6

Add the sliced olives and cooked sausage back to the skillet. Stir to combine and cook for another 2-3 minutes to heat through. Adjust the seasoning with salt and black pepper to taste.

Step 7

Toss the cooked fettuccine in the skillet with the sauce, adding a splash of reserved pasta water if the sauce is too thick.

Step 8

Serve the fettuccine hot, topped with grated parmesan cheese (if using) and a sprinkle of fresh parsley for garnish.
