Ingredients

  • 12 oz fettuccine pasta
  • 2 tbsp olive oil
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 3 garlic cloves
  • 8 oz goat cheese
  • 1 cup heavy cream
  • 0.25 cup fresh basil leaves
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup parmesan cheese (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the fettuccine pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.

Step 2

While the pasta cooks, prepare the vegetables. Thinly slice the red and yellow bell peppers and mince the garlic cloves.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the sliced bell peppers and sauté for 6-8 minutes until tender and slightly caramelized.

Step 4

Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant. Be careful not to burn the garlic.

Step 5

Reduce the heat to low. Add the goat cheese and heavy cream to the skillet, stirring until the goat cheese is melted and the sauce is smooth and creamy.

Step 6

Season the sauce with salt and black pepper, and add the fresh basil leaves (chopped or torn). Stir to combine.

Step 7

Add the cooked fettuccine to the skillet and toss to coat the pasta evenly in the sauce. If the sauce is too thick, add the reserved pasta water a little at a time until the desired consistency is reached.

Step 8

Taste and adjust seasoning if necessary. Serve the pasta hot, topped with freshly grated parmesan cheese if desired.
