  • 12 oz fettuccine pasta
  • 2 pieces boneless, skinless chicken breasts

  • 1 cup Parmesan cheese (grated)

  • 0.5 tsp black pepper
  • 1 piece red bell pepper (sliced)
  • 1 piece green bell pepper (sliced)
  • 2 tbsp fresh parsley (chopped, optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to the package instructions until al dente. Drain, toss lightly with a bit of olive oil to prevent sticking, and set aside.

Step 2

While the pasta is cooking, pat the chicken breasts dry with paper towels. Sprinkle 2 tablespoons of Cajun seasoning evenly over both sides of the chicken.

Step 3

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side, or until cooked through and browned. Remove the chicken from the skillet, rest for 5 minutes, then slice into thin strips.

Return the sliced chicken to the skillet and mix gently to combine with the pasta and sauce.
