Ingredients

  • 12 oz fettuccine pasta
  • 1.5 cups cherry tomatoes
  • 1 large ripe avocado
  • 6 slices bacon
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 0.5 cup Parmesan cheese
  • 1.5 tbsp lemon juice
  • 0.25 cup fresh basil leaves
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine until al dente according to the package instructions. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, prepare the bacon. Heat a large skillet over medium heat and cook the bacon slices until crispy, about 7-8 minutes. Remove the bacon from the skillet and allow to cool on a plate lined with paper towels. Once cool, crumble it into small pieces.

Discard most of the bacon grease from the skillet, leaving about 1 tablespoon for flavor. Add the olive oil and minced garlic to the skillet, and sauté over medium heat for 1-2 minutes until fragrant.
