Ingredients

  • 12 oz fettuccine pasta
  • 8 oz brie cheese
  • 6 slices bacon
  • 1 cup heavy cream
  • 2 cloves garlic
  • 2 tbsp butter
  • 1 cup parmesan cheese
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions. Reserve 1 cup of pasta water before draining.

Step 2

While the pasta cooks, place the bacon slices in a cold skillet and turn the heat to medium. Cook until crispy, about 5-7 minutes. Remove and drain on a paper towel-lined plate. Chop into small pieces.

Step 3

In the same skillet, remove excess bacon fat, leaving about 1 tablespoon. Add the butter and garlic, minced, and cook over medium heat for 1-2 minutes until fragrant.

Step 4

Reduce the heat to low and pour in the heavy cream. Stir occasionally and bring to a gentle simmer.

Step 5

Cut the brie cheese into small pieces, removing the rind if desired. Gradually whisk it into the cream until melted and smooth.

Step 6

Stir in the grated parmesan cheese until fully incorporated. Add the chopped bacon, salt, and black pepper. If the sauce is too thick, add small amounts of the reserved pasta water until desired consistency is reached.

Step 7

Toss the cooked fettuccine with the sauce until well coated.

Step 8

Garnish with chopped fresh parsley and serve immediately.
