Ingredients

  • 12 oz Fettuccine pasta
  • 2 medium Ripe avocados
  • 1.5 cups Cherry tomatoes

  • 3 tbsp Extra virgin olive oil
  • 0.5 cups Fresh basil leaves
  • 2 tbsp Lemon juice
  • 0.25 cups Parmesan cheese, grated
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1/2 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, cut the avocados in half, remove the pits, and scoop the flesh into a blender or food processor. Add the garlic, lemon juice, olive oil, salt, black pepper, and 3-4 fresh basil leaves to the blender.

Blend the avocado mixture on high until smooth and creamy. If the mixture seems too thick, add 1-2 tablespoons of the reserved pasta cooking water to thin it out to your desired consistency.
