Ingredients

  • 12 oz Fettuccine pasta
  • 2 pieces Chicken breast
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 3 pieces Garlic cloves, minced
  • 2 cups Heavy cream
  • 1 cup Parmesan cheese, grated
  • 3 tbsp Unsalted butter
  • 2 tbsp Fresh parsley, chopped
  • 4 quarts Water

Directions

Step 1

Bring a large pot of water to a boil. Add a pinch of salt and cook the fettuccine pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

Meanwhile, season the chicken breasts with salt and pepper on both sides.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken breasts and cook for 5-6 minutes per side, or until they are golden brown and fully cooked through. Remove the chicken from the skillet and set aside to rest.

Step 4

In the same skillet, reduce the heat to medium-low and melt the butter. Add the minced garlic and sauté for 1-2 minutes until fragrant.
