Ingredients

  • 1 pound Ground pork
  • 0.5 pound Ground beef
  • 0.75 cup Feta cheese, crumbled
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh oregano, chopped
  • 1 teaspoon Paprika
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Salt
  • 0.25 teaspoon Crushed red pepper flakes
  • 1 tablespoon Olive oil
  • 10 feet Sausage casings (optional)

Directions

Step 1

In a large mixing bowl, combine the ground pork and ground beef.

Step 2

Add the crumbled feta cheese, minced garlic, parsley, oregano, paprika, black pepper, salt, and red pepper flakes to the bowl.

Step 3

Using your hands, mix the ingredients until evenly distributed. Be careful not to overwork the mixture to keep the sausage tender.

Step 4

If using sausage casings, soak them in warm water for about 30 minutes, then rinse and drain them. Place the casings onto your sausage stuffer according to the manufacturer's instructions.

Step 5

Stuff the sausage mixture into the casings, taking care not to overfill them. Twist the casing at even intervals to form individual sausages.

Step 6

If you are not using casings, form the sausage mixture into small patties or logs by hand.

Step 7

Heat olive oil in a large skillet over medium heat. Cook the sausages or patties for 4-5 minutes per side, or until browned and cooked through. The internal temperature should reach 160°F (71°C).

Step 8

Alternatively, grill the sausages over medium heat for 10-12 minutes, turning occasionally, or bake them in a preheated 375°F (190°C) oven for 20-25 minutes.

Step 9

Serve the feta sausages hot with your favorite sides, such as roasted vegetables, rice pilaf, or a fresh salad.
