Ingredients

  • 200 grams feta cheese
  • 120 grams Greek yogurt
  • 2 tablespoons extra virgin olive oil
  • 150 grams cherry tomatoes
  • 10 pieces kalamata olives (pitted)
  • 1 piece garlic clove
  • 1 teaspoon fresh oregano leaves (optional)
  • 0.5 teaspoons red chili flakes
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Spread the cherry tomatoes on a baking sheet lined with parchment paper. Add the garlic clove (leave it unpeeled) to the sheet.

Step 3

Drizzle 1 tablespoon of olive oil over the tomatoes and garlic. Sprinkle with a pinch of salt and black pepper.

Step 4

Roast the tomatoes and garlic in the preheated oven for 10 minutes, or until the tomatoes are blistered and slightly caramelized. Remove and let cool slightly.

Step 5

In a food processor, combine the feta cheese, Greek yogurt, 1 tablespoon of olive oil, and roasted garlic (squeeze it out of its skin). Blend until smooth and creamy.

Step 6

Chop the kalamata olives into small pieces and set aside. Roughly chop the roasted cherry tomatoes.

Step 7

Transfer the feta mixture to a serving bowl. Gently fold in the roasted tomatoes and olives, reserving a few for garnish.

Step 8

Sprinkle the dip with red chili flakes, fresh oregano (if using), and a drizzle of olive oil for presentation.
