Ingredients

  • 1 cup Green or brown lentils
  • 3 cups Water
  • 0.5 teaspoon Salt

  • 1 cup Cherry tomatoes
  • 0.25 medium Red onion
  • 0.5 cup Cilantro leaves and stems (chopped)
  • 0.5 cup Feta cheese (crumbled)
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 teaspoon Ground cumin
  • 0.25 teaspoon Black pepper
  • 1 clove Garlic clove (minced)
  • 1 cup Baby spinach or arugula (optional)

Directions

Step 1

Rinse the lentils thoroughly under cold water to remove any debris. Add the lentils and water to a medium saucepan and bring to a boil.

Reduce the heat to low and simmer the lentils for 20-25 minutes, or until tender but not mushy. Add the salt during the last 5 minutes of cooking. Drain the lentils and set aside to cool.
