Ingredients

  • 15 pieces Baby red bell peppers
  • 1 cup (crumbled) Feta cheese
  • 4 oz (softened) Cream cheese
  • 2 tbsp (chopped) Fresh parsley
  • 2 tbsp (chopped) Fresh dill
  • 2 cloves (minced) Garlic
  • 1 tbsp Olive oil
  • 1 tsp Lemon zest
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Rinse the baby red bell peppers and slice off the tops. Carefully remove the seeds and membranes using a small spoon or paring knife to create a hollow cavity. Set aside.

Step 3

In a medium mixing bowl, combine feta cheese, cream cheese, parsley, dill, garlic, olive oil, lemon zest, salt, and black pepper. Mix well until the filling is smooth and evenly combined.

Step 4

Using a small spoon or piping bag, fill each hollowed-out red pepper with the feta herb mixture. Gently press the filling to avoid air pockets and ensure the pepper is fully stuffed.

Step 5

Arrange the stuffed peppers on the prepared baking sheet in a single layer.

Step 6

Bake the peppers in the preheated oven for 12-15 minutes, or until the peppers are tender and the stuffing is lightly golden on top.

Step 7

Remove the peppers from the oven and allow them to cool for a few minutes before serving.

Step 8

Serve warm or at room temperature as a starter, side dish, or party appetizer. Enjoy!
