Ingredients

  • 1 piece Puff pastry sheet
  • 100 grams Feta cheese, crumbled
  • 50 grams Dried cranberries (craisins)
  • 50 grams Walnuts, finely chopped
  • 1 tablespoon Honey
  • 1 tablespoon Fresh parsley, finely chopped
  • 1 piece Egg, beaten
  • 1 tablespoon All-purpose flour (for dusting)

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

Step 2

Lightly dust your countertop with flour, and roll out the puff pastry sheet into a 12x12-inch square if it isn't pre-rolled.

Step 3

In a mixing bowl, combine the crumbled feta, dried cranberries, chopped walnuts, honey, and freshly chopped parsley. Mix until well combined.

Step 4

Spread the feta mixture evenly over the puff pastry, leaving a 1/2-inch border around the edges.

Step 5

Starting from one edge, carefully roll the puff pastry into a tight log. Use a little water along the far edge to seal the seam.

Step 6

Place the roll seam-side down and refrigerate for 10-15 minutes to firm up, making it easier to slice.

Step 7

Using a sharp knife, cut the roll into 12 equal slices, approximately 1-inch thick each.

Place the pinwheels cut-side up onto the prepared baking sheet, spacing them about 1 inch apart.

Brush the tops and sides of the pinwheels with the beaten egg to help them bake into a golden brown color.

Bake in the preheated oven for 18-20 minutes, or until the pinwheels are puffed and golden brown.
