Ingredients

  • 8 ounces Feta cheese block
  • 4 ounces Cream cheese (softened)
  • 0.25 cup Kalamata olives (pitted and chopped)
  • 0.25 cup Sun-dried tomatoes (chopped)
  • 2 tablespoons Fresh parsley (finely chopped)
  • 1 tablespoon Fresh basil (chopped)
  • 1 clove Garlic (minced)
  • 1 tablespoon Extra virgin olive oil
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 0.33 cup Chopped walnuts or pecans (optional, for coating)
  • 0 Crackers or baguette slices (for serving)

Directions

Step 1

Place the feta cheese and softened cream cheese in a mixing bowl. Using a fork or a hand mixer, blend until the mixture is smooth and well combined.

Step 2

Add the chopped Kalamata olives, sun-dried tomatoes, parsley, basil, minced garlic, olive oil, ground black pepper, and crushed red pepper flakes (if using) to the cheese mixture. Stir until evenly incorporated.

Step 3

Lay a piece of plastic wrap on a flat surface. Spoon the cheese mixture onto the center of the plastic wrap. Shape the mixture into a log about 6 inches long, using the plastic wrap to help mold and smooth it. Wrap tightly and twist the ends of the plastic wrap to secure the log.

Step 4

Refrigerate the cheese log for at least 1 hour, or until firm enough to hold its shape.

Step 5

Optional: before serving, roll the firm cheese log in chopped walnuts or pecans to coat the outside for added texture and flavor.

Step 6

Unwrap the cheese log and place it on a serving platter. Garnish with extra parsley or basil if desired.

Step 7

Serve with crackers, baguette slices, or fresh vegetables. Enjoy!
