Ingredients

  • 300 grams Cherry tomatoes
  • 150 grams Feta cheese
  • 1 medium Cucumber
  • 0.5 medium Red onion
  • 3 tablespoons Extra virgin olive oil
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 10 leaves Fresh basil leaves

Directions

Step 1

Wash the cherry tomatoes and cut them in half. Place them in a large mixing bowl.

Step 2

Cut the feta cheese into small cubes and add them to the bowl with the tomatoes.

Step 3

Peel the cucumber, slice it in half lengthwise, and then into thin half-moons. Add to the bowl.

Step 4

Peel and thinly slice the red onion. Add the slices to the salad bowl.

Step 5

In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and black pepper until well combined.

Step 6

Pour the dressing over the salad and gently toss all the ingredients together until evenly coated.

Roughly tear the basil leaves and sprinkle them over the salad before serving.
