Preheat your oven to 375°F (190°C).
Using a damp paper towel, clean the portabella mushrooms and carefully remove the stems and gills with a spoon.
Rub the mushroom caps with 1 tablespoon of olive oil and place them on a baking sheet lined with parchment paper, gill-side up.
