Ingredients

  • 1.5 cups (fresh, canned, or frozen and thawed) Corn kernels
  • 1 cup (halved) Cherry tomatoes
  • 1 medium (diced) Red bell pepper
  • 1 large (diced) Avocado
  • 0.25 cup (finely chopped) Red onion
  • 0.25 cup (fresh, chopped) Cilantro
  • 1 small (seeded and finely chopped, optional) Jalapeño
  • 3 tbsp (freshly squeezed) Lime juice
  • 2 tbsp Olive oil
  • 1 tsp Ground cumin
  • 0.5 tsp Smoked paprika
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

In a large mixing bowl, combine the black beans, corn kernels, cherry tomatoes, diced red bell pepper, avocado, red onion, cilantro, and jalapeño (if using).
