Ingredients

  • 300 grams Wholemeal flour
  • 150 grams Plain white flour
  • 50 grams Oatmeal
  • 1 teaspoon Bicarbonate of soda (baking soda)
  • 1 teaspoon Salt
  • 500 ml Buttermilk
  • 1 tablespoon Honey
  • 15 grams Butter

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 900g loaf tin or line it with parchment paper.

Step 2

In a large mixing bowl, combine the wholemeal flour, plain white flour, oatmeal, bicarbonate of soda, and salt. Mix well to combine the dry ingredients.

Step 3

In a small saucepan, melt the butter over low heat. Once melted, let it cool slightly.

Step 4

In a separate bowl or jug, whisk together the buttermilk and honey. Add the melted butter and whisk again until combined.

Step 5

Make a well in the center of the dry ingredients and pour in the wet mixture. Using a wooden spoon or your hands, gently mix until a soft dough forms. Avoid overmixing as this can result in a dense bread.

Step 6

Spoon the dough into the prepared loaf tin and smooth out the top with the back of the spoon.

Step 7

Place the tin in the preheated oven and bake for 45-50 minutes, or until the bread has risen and sounds hollow when tapped on the bottom.

Step 8

Remove the bread from the oven and allow it to cool in the tin for 5-10 minutes. Then turn it out onto a wire rack to cool completely.

Step 9

Slice and serve with butter, jam, or alongside your favorite soup or stew. Store leftovers in an airtight container for up to 3 days.
