Ingredients

  • 200 grams Smoked salmon
  • 1 medium Fennel bulb
  • 2 large Oranges
  • 100 grams Arugula (rocket)
  • 3 tablespoons Extra virgin olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh dill

Directions

Step 1

Wash and dry the fennel bulb. Slice it very thinly using a sharp knife or mandoline. Set aside.

Peel the oranges and remove all the white pith. Slice them into thin rounds, then cut each round in half to create half-moons.
