Ingredients

  • 1 medium-sized Fresh fennel bulb
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 4 ounces Fontina cheese
  • 4 slices Sourdough bread
  • 2 tablespoons Butter

Directions

Step 1

Trim the stalks and fronds from the fennel bulb. Reserve some of the fronds for garnish if desired. Cut the fennel bulb into thin slices.

Step 2

Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the fennel slices and cook for 5-7 minutes, stirring occasionally, until softened and slightly caramelized. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Remove the fennel from the skillet and set aside.

Grate the fontina cheese or slice it thinly, depending on your preference.

Spread 1/2 tablespoon of butter on one side of each slice of sourdough bread.
