Ingredients

  • 1 large Fennel bulb
  • 2 cups Green cabbage
  • 2 medium Carrots
  • 2 tablespoons Fresh parsley
  • 0.5 cup Plain Greek yogurt
  • 2 tablespoons Mayonnaise
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Trim the ends of the fennel bulb, remove any tough outer layers, and cut the bulb in half lengthwise. Using a sharp knife or a mandoline, thinly slice the fennel into very fine shreds. Add to a large mixing bowl.

Finely shred the green cabbage to measure 2 cups, and add it to the bowl with the fennel.
