Ingredients

  • 1 lb pork tenderloin
  • 0.5 cup orange juice (freshly squeezed)
  • 1 whole zest of an orange
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 2 whole garlic cloves (minced)
  • 2 tbsp olive oil
  • 1 tsp rosemary (fresh, chopped)
  • 1 tsp thyme (fresh, chopped)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp cornstarch
  • 2 tbsp water
  • 4 pieces orange slices (for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the pork tenderloin dry with paper towels, then season it evenly with salt and black pepper.

Step 3

In a small bowl, mix together orange juice, orange zest, honey, soy sauce, minced garlic, rosemary, and thyme. Set aside.

Step 4

In an oven-safe skillet, heat the olive oil over medium-high heat. Sear the pork tenderloin on all sides until golden brown, about 2-3 minutes per side.

Step 5

Remove the skillet from the heat and pour the orange glaze mixture over the pork, ensuring it’s well coated.

Step 6

Transfer the skillet to the preheated oven and roast the pork for 18-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

Step 7

Remove the pork from the skillet and let it rest on a cutting board for 5-7 minutes before slicing.

Step 8

While the pork is resting, place the skillet with the remaining glaze back on the stovetop over medium heat. Stir together the cornstarch and water in a small bowl to create a slurry, then add it to the glaze.

Step 9

Simmer the glaze for 2-3 minutes until it thickens, stirring frequently.

Step 10

Slice the pork tenderloin into medallions and drizzle the thickened orange glaze over the slices.

Step 11

Garnish with orange slices and serve immediately for a flavorful and vibrant dish.
