Ingredients

  • 2 pounds beef round steak
  • 0.5 cups all-purpose flour
  • 1 teaspoons salt
  • 1 teaspoons black pepper
  • 1 teaspoons paprika
  • 2 tablespoons vegetable oil
  • 1 large yellow onion, sliced
  • 1 medium green bell pepper, sliced
  • 3 cloves garlic cloves, minced
  • 28 ounces canned diced tomatoes
  • 1 cups beef broth
  • 1 tablespoons Worcestershire sauce
  • 0.5 teaspoons dried thyme
  • 1 leaf bay leaf
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Cut the round steak into 4–6 even portions. Use a meat mallet to tenderize the steak by pounding each piece until it is about 1/2 inch thick.

Step 3

In a shallow dish, combine the flour, salt, black pepper, and paprika. Dredge each piece of steak in the seasoned flour, ensuring an even coating on all sides.

Step 4

In a large oven-safe skillet or Dutch oven, heat the vegetable oil over medium-high heat. Sear the coated steak pieces for 2–3 minutes on each side until browned. Work in batches if necessary to avoid overcrowding the pan. Remove the steak and set aside.

Step 5

In the same skillet, add the sliced onion, green bell pepper, and minced garlic. Sauté for 3–5 minutes, or until the vegetables are softened and fragrant.

Step 6

Stir in the canned diced tomatoes, beef broth, Worcestershire sauce, dried thyme, and bay leaf. Mix well to combine the flavors.

Step 7

Return the seared steak to the skillet, nestling each piece into the tomato mixture. Spoon some of the sauce over the top of the steak to ensure it is fully coated.

Step 8

Cover the skillet or Dutch oven with a lid or aluminum foil, and transfer it to the preheated oven. Bake for 1 hour and 30 minutes to 2 hours, or until the steak is tender and easily cut with a fork.

Step 9

Remove the bay leaf and discard it. Taste the sauce and adjust seasoning with additional salt and pepper if needed.

Step 10

Serve the Swiss steak hot, garnished with chopped fresh parsley if desired. Pair with mashed potatoes, rice, or buttered egg noodles for a complete meal.
