  • 1 can (400g) black beans, drained and rinsed
  • 1 can (400g) diced tomatoes, drained
  • 6 large tortillas
  • 2 cups shredded lettuce
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 0.5 cup salsa
  • 1 avocado, sliced
  • 0.25 cup fresh cilantro, chopped (optional)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.

Add the minced garlic and cook for another 30 seconds until fragrant.

Increase the heat to medium-high and add the ground beef to the skillet. Cook, breaking it into small crumbles with a wooden spoon, for 6-8 minutes or until browned.
