Ingredients

  • 4 large pieces Bell peppers (red, green, or a mix)
  • 3 medium pieces Ripe tomatoes
  • 3 cloves Garlic
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C) or prepare a grill for medium-high heat.

Step 2

Wash the bell peppers and tomatoes thoroughly under running water. Pat them dry with a clean kitchen towel.

Step 3

Place the whole bell peppers and tomatoes on a baking sheet lined with parchment paper (or directly on the grill grates if grilling).

Roast the vegetables for about 20 minutes, turning them occasionally, until the skins are charred and blistered.
