Ingredients

  • 1 medium yellow onion, diced

  • 3 medium celery stalks, sliced
  • 2 pieces boneless, skinless chicken breasts
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 2 pieces bay leaves
  • 4 cups egg noodles
  • 1 teaspoon salt
  • 0 black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and cook for 2-3 minutes until softened.

Step 3

Stir in the minced garlic, sliced carrots, and sliced celery. Cook for another 5 minutes, stirring occasionally.

Step 4

Place the chicken breasts into the pot. Pour in the chicken broth.

Step 5

Add the dried thyme, dried rosemary, and bay leaves to the pot. Stir and bring the mixture to a boil.

Reduce the heat to a simmer. Cover and cook for 20 minutes, or until the chicken is fully cooked.
