Ingredients

  • 3 cups Mixed nuts (almonds, pecans, cashews, or peanuts)
  • 3 tablespoons Brown sugar
  • 2 tablespoons Maple syrup
  • 1.5 tablespoons Olive oil
  • 1 teaspoon Chipotle chili powder
  • 0.5 teaspoon Paprika
  • 0.25 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 1 large Egg white

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, whisk the egg white until it becomes frothy. This will help coat the nuts evenly and bind the flavors to them.

Step 3

Add the vanilla extract, brown sugar, maple syrup, olive oil, chipotle chili powder, paprika, cinnamon, and salt to the egg white. Mix well to form a sticky, well-combined glaze.

Step 4

Toss the mixed nuts into the bowl and stir until each nut is evenly coated with the glaze.

Step 5

Spread the coated nuts in a single, even layer on the prepared baking sheet to ensure even roasting.

Step 6

Bake in the preheated oven for 10 minutes. Remove the nuts from the oven, stir them to ensure even cooking, and return them to the oven for an additional 10–15 minutes.

Step 7

Check the nuts frequently in the last few minutes of baking to prevent burning. They should appear golden brown and smell fragrant when done.

Step 8

Remove the tray from the oven and let the nuts cool completely on the baking sheet. They will harden and become delightfully crunchy as they cool.

Step 9

Once cooled, transfer the nuts to an airtight container for storage. These nuts will stay fresh for up to 1 week, making them a convenient snack or gift.
