Ingredients

  • 1 cup Cornmeal (yellow or white)
  • 1 cup All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Salt
  • 1 cup Buttermilk
  • 2 large Eggs
  • 4 tablespoons Unsalted butter (melted)
  • 2 tablespoons Honey
  • 1 tablespoon Vegetable oil (for greasing the skillet)

Directions

Step 1

Preheat your oven to 400°F (200°C). Place a cast-iron skillet in the oven while it preheats to get the skillet nice and hot.

Step 2

In a large mixing bowl, whisk together the cornmeal, all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Step 3

In a separate medium-sized bowl, whisk together the buttermilk, eggs, melted butter, and honey until fully blended.

Step 4

Gradually pour the wet ingredients into the dry ingredients. Stir just until combined; do not overmix. The batter will be slightly lumpy, and that’s okay.

Step 5

Carefully remove the hot skillet from the oven using oven mitts. Add the vegetable oil to the skillet and tilt to coat the bottom and sides evenly.

Step 6

Immediately pour the cornbread batter into the hot skillet, spreading it out evenly with a spatula if necessary.

Step 7

Return the skillet to the oven and bake for 20–25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Step 8

Let the cornbread cool in the skillet for 5 minutes before slicing and serving. Serve warm with butter, honey, or your favorite toppings.
