Ingredients

  • 2 pounds boneless pork shoulder
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 1.5 cups roasted green chiles, peeled, seeded, and chopped
  • 1 cup diced tomatoes (canned or fresh)
  • 4 cups chicken broth
  • 3 medium potatoes, diced
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lime juice
  • 0.25 cup fresh cilantro, chopped (optional)

Directions

Step 1

Trim excess fat from the pork shoulder and cut it into 1-inch cubes.

Step 2

Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.

Step 3

Add the pork in batches and brown on all sides. Remove the pork and set aside.

Step 4

In the same pot, add the diced onion and sauté for 5 minutes, or until translucent.

Step 5

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Step 6

Return the browned pork to the pot and add the roasted green chiles, diced tomatoes, and chicken broth. Stir to combine.

Step 7

Add the diced potatoes, cumin, oregano, salt, and black pepper to the pot. Bring the mixture to a boil.

Step 8

Reduce the heat to low, cover, and simmer for 1 hour, stirring occasionally, until the pork is tender and the flavors are well blended.

Step 9

Stir in the lime juice and adjust the seasoning to taste. If desired, garnish with fresh cilantro before serving.

Step 10

Serve hot with warm tortillas or crusty bread on the side for a complete meal.
