Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon granulated sugar
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter, cold and cubed
  • 0.75 cups buttermilk, cold
  • 2 tablespoons unsalted butter, melted (for brushing)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

Step 3

Add the cold, cubed unsalted butter into the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs with small pea-sized pieces of butter.

Step 4

Make a well in the center of the flour mixture and pour in the cold buttermilk. Stir gently with a fork until the mixture just comes together into a shaggy dough. Do not overmix.

Step 5

Turn the dough out onto a lightly floured surface and gently pat it into a rectangle about 1-inch thick. Fold the dough in half, then pat it out again. Repeat this process 3–4 times to create flaky layers.

Step 6

Using a 2.5-inch round biscuit cutter, cut out biscuits from the dough, pressing straight down without twisting. Re-roll the scraps as needed to cut out more biscuits.

Step 7

Place the biscuits close together on the prepared baking sheet for softer sides, or spaced apart for crispier sides.

Step 8

Brush the tops of the biscuits with melted butter, then bake in the preheated oven for 10–12 minutes, or until the tops are golden brown.

Step 9

Remove the biscuits from the oven and let them cool for a few minutes before serving. Brush with additional melted butter if desired.
