  • 2 medium celery stalks, diced
  • 400 grams diced tomatoes (canned or fresh)
  • 3 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice (optional, for garnish)

Directions

Step 1

If using fresh fava beans, remove the beans from their pods. Bring a pot of water to a boil and blanch the beans for 2-3 minutes. Drain and let them cool slightly before peeling off the outer skins. Set the beans aside.

Step 2

Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened and translucent.

Stir in the minced garlic, diced carrots, and diced celery. Cook for another 5-6 minutes, stirring occasionally, until the vegetables begin to soften.
