Ingredients

  • 500 grams fresh fava beans (shelled)
  • 200 grams cherry tomatoes
  • 1 medium cucumber
  • 0.5 red onion
  • 30 grams fresh parsley
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Bring a small pot of water to a boil. Add the shelled fava beans and blanch them for 2-3 minutes until tender.

Step 2

Drain the fava beans and immediately transfer them to a bowl of ice water to stop the cooking process.

Step 3

Once cooled, gently remove the outer skins of the blanched fava beans by pinching them. Discard the skins and set the beans aside.

Dice the cucumber into small cubes and halve the cherry tomatoes. Thinly slice the red onion. Roughly chop the fresh parsley.
