  • 2 cups All-purpose flour
  • 0.5 teaspoons Ground cardamom
  • 2 tablespoons Brandy or cognac
  • 1 tablespoon (melted) Butter
  • 4 cups (for frying) Vegetable oil
  • 2 tablespoons (for dusting) Powdered sugar

Directions

Step 1

In a large mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and light.

Step 2

Add the heavy cream, melted butter, brandy (or cognac), and ground cardamom to the bowl. Whisk to combine.

Step 3

Gradually mix in the all-purpose flour until a smooth, soft dough forms. Be careful not to overmix.

Step 4

Wrap the dough in plastic wrap and refrigerate for at least 1 hour to make it easier to handle.

After chilling, lightly flour your work surface and roll out the dough to about 1/8 inch thickness.
