Grind the cashew nuts into a fine powder using a food processor. Be careful not to overgrind, as it could turn into cashew butter.
In a non-stick pan, heat the granulated sugar and water over medium heat to make caramel. Stir gently until the sugar dissolves and transforms into a golden-brown caramel. Be cautious not to burn it.
Lower the heat and carefully add the heavy cream and unsalted butter to the caramel. Mix well to create a smooth caramel sauce. Set this aside to cool slightly.
In a separate pan, heat the ghee over low heat and add the cashew powder. Stir constantly for 2–3 minutes until the cashew powder is slightly toasted and aromatic.
Add the caramel sauce to the pan with the toasted cashew powder. Combine well, ensuring there are no lumps.
Gradually add the milk powder and cardamom powder to the mixture. Stir continuously over low heat until the mixture thickens and starts to leave the sides of the pan. This should take about 8–10 minutes.
Grease a square or rectangular dish with a little ghee, or line it with parchment paper. Pour the cashew caramel mixture into the dish and spread it evenly using a spatula.
Allow the mixture to cool completely at room temperature or refrigerate for about an hour to set.
Once set, cut the burfi into squares or diamonds using a sharp knife. Serve and enjoy!
