Ingredients

  • 16 oz elbow macaroni
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 4 cups whole milk
  • 3 cups sharp cheddar cheese, shredded
  • 1 cup gruyere cheese, shredded
  • 0.5 cup parmesan cheese, grated
  • 8 slices cooked bacon, crumbled
  • 0.5 cup panko breadcrumbs
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish and set it aside.

Step 2

Cook the elbow macaroni in a large pot of salted boiling water according to the package instructions. Drain and set aside.

Step 3

In a medium saucepan over medium heat, melt the butter. Once melted, add the flour and whisk continuously for 1-2 minutes until the mixture is smooth and starts to bubble.

Step 4

Gradually pour in the milk, whisking constantly to ensure no lumps form. Continue stirring until the mixture thickens and coats the back of a spoon, about 5-7 minutes.

Step 5

Reduce the heat to low and slowly add the shredded cheddar, gruyere, and parmesan cheeses to the sauce, one handful at a time. Stir until melted and smooth. Reserve 1/2 cup of the shredded cheddar for the topping.

Step 6

Season the cheese sauce with salt and black pepper. Taste and adjust seasoning if necessary.

Step 7

Combine the cooked macaroni and cheese sauce in a large mixing bowl. Stir until the macaroni is well coated.

Step 8

Transfer half of the macaroni mixture to the prepared baking dish. Sprinkle half of the crumbled bacon over the layer. Add the remaining macaroni mixture on top and sprinkle with the rest of the bacon.

Step 9

In a small bowl, mix the panko breadcrumbs with olive oil until evenly coated. Sprinkle the breadcrumb mixture evenly over the top of the macaroni. Add the reserved shredded cheddar cheese on top of the breadcrumbs.

Step 10

Optional: Sprinkle paprika over the top for a pop of color and extra flavor.

Step 11

Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

Step 12

Allow the dish to cool for 5-10 minutes before serving. Enjoy your decadent Fat Man's Misery!
