Ingredients

  • 8 medium ripe tomatoes
  • 2 garlic cloves
  • 1 medium onion
  • 1 small carrot
  • 1 small celery stalk
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.25 teaspoon crushed red pepper flakes
  • 1 cup vegetable broth
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Wash and roughly chop the tomatoes. Set them aside.

Step 2

Peel and finely chop the garlic cloves, onion, carrot, and celery.

Step 3

In a large non-stick saucepan, add the chopped onion, carrot, and celery. Sauté over medium heat for 5 minutes using a few tablespoons of vegetable broth to prevent sticking. Stir occasionally.

Add the chopped garlic and cook for an additional 2 minutes, stirring continuously.
