Ingredients

  • 150 grams pitted dates
  • 300 milliliters boiling water
  • 100 grams grated carrot
  • 180 grams self-rising flour
  • 50 grams brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 1-pound loaf tin with parchment paper or lightly grease it with nonstick spray.

Chop the dates into small pieces and place them in a heatproof bowl. Pour the boiling water over the dates and set aside for 10 minutes to soften.
