Ingredients

  • 1 tablespoon Olive oil
  • 1 pound Ground beef or lamb
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1.5 cups Frozen mixed vegetables (peas, carrots, and corn)
  • 2 tablespoons Tomato paste
  • 1 cup Beef or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 3 cups Mashed potatoes (store-bought or homemade)
  • 0.5 cup Shredded cheddar cheese (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Heat a large oven-safe skillet over medium heat and add the olive oil.

Step 3

Add the ground beef or lamb to the skillet and cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes. Drain any excess grease if needed.

Step 4

Add the diced onion and minced garlic to the skillet. Sauté for 3-4 minutes until softened and fragrant.

Step 5

Stir in the frozen mixed vegetables, tomato paste, beef or chicken broth, Worcestershire sauce, salt, and black pepper. Cook for another 5 minutes, stirring occasionally, until the mixture is well-combined and slightly thickened.

Step 6

Remove the skillet from heat and spread the meat and vegetable mixture into an even layer.

Step 7

Carefully spread the mashed potatoes over the meat mixture, smoothing it into an even layer with a spatula. If using, sprinkle shredded cheddar cheese over the top.

Step 8

Place the skillet in the preheated oven and bake for 15-20 minutes, or until the mashed potatoes are golden and the cheese (if used) is bubbly.

Step 9

Remove from the oven and let it cool for 5 minutes before serving. Enjoy your Fast Shepherd's Pie!
