Ingredients

  • 3 tablespoons unsalted butter
  • 4 cups yellow onions, thinly sliced
  • 0.5 teaspoons granulated sugar
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon all-purpose flour
  • 4 cups beef broth
  • 0.5 cups dry white wine
  • 1 bay leaves
  • 0.5 teaspoons dried thyme
  • 4 baguette slices, toasted
  • 1 cup grated Gruyère or Swiss cheese
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

In a large pot over medium heat, melt the butter until it foams.

Step 2

Add the sliced onions and sprinkle with sugar. Cook, stirring frequently, for about 8-10 minutes until the onions are golden brown and caramelized.

Step 3

Stir in the balsamic vinegar and cook for another 1 minute.

Step 4

Sprinkle the flour over the onions and stir well to coat. Cook for 1-2 minutes to remove any raw flour taste.

Step 5

Gradually stir in the beef broth and white wine, scraping the bottom of the pot to release any browned bits.

Step 6

Add the bay leaf and dried thyme. Bring the soup to a simmer and cook for 15 minutes, stirring occasionally. Season with salt and pepper to taste.

Step 7

Preheat your oven broiler. Ladle the soup into oven-safe bowls and place a toasted baguette slice on top of each.

Step 8

Sprinkle the grated Gruyère or Swiss cheese generously over the bread.

Step 9

Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.

Step 10

Carefully remove the bowls from the oven and serve the soup hot, garnished with a sprig of fresh thyme if desired.
