Ingredients

  • 1 medium spaghetti squash
  • 1 large egg
  • 3 tablespoons all-purpose flour
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 3 tablespoons olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the spaghetti squash in half lengthwise and scoop out the seeds. Place the squash halves cut-side down on a baking sheet lined with parchment paper.

Step 3

Bake the squash for 30-40 minutes or until the flesh is tender and can be easily shredded. Let it cool slightly before handling.

Step 4

Using a fork, scrape the flesh of the squash into strands, then transfer the strands to a clean kitchen towel. Squeeze out as much excess moisture as possible to help the fritters hold their shape.

Step 5

In a mixing bowl, combine 2 cups of the spaghetti squash strands with the egg, flour, Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.

Step 6

Heat the olive oil in a large skillet over medium heat.

Step 7

Scoop 2 tablespoons of the mixture and shape it into a small patty. Place it into the skillet and repeat with the remaining mixture, working in batches to avoid crowding.

Step 8

Cook each fritter for 2-3 minutes per side, or until golden brown and crisp.

Step 9

Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.

Step 10

Serve warm, optionally garnished with extra Parmesan cheese and a side of sour cream or marinara sauce for dipping.
