Ingredients

  • 3 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 medium, finely chopped Shallot
  • 2 cloves, minced Garlic
  • 16 ounces, cleaned and thinly sliced Cremini mushrooms
  • 1/3 cup Dry white wine
  • 1/2 cup Beef or vegetable broth
  • 1/2 cup Heavy cream
  • 1 teaspoon, chopped Fresh thyme leaves
  • 1/2 teaspoon, or to taste Salt
  • 1/4 teaspoon, or to taste Black pepper
  • 1 tablespoon, chopped (optional for garnish) Fresh parsley

Directions

Step 1

Heat a large skillet over medium heat and add the butter and olive oil. Once the butter has melted, add the finely chopped shallot. Sauté for 2-3 minutes until softened and translucent.

Step 2

Add the minced garlic and sauté for an additional 30 seconds until fragrant, being careful not to burn it.

Step 3

Increase the heat to medium-high and add the sliced cremini mushrooms. Cook for 6-8 minutes, stirring occasionally, until the mushrooms release their moisture and begin to brown.

Step 4

Deglaze the pan with the white wine, scraping up any browned bits from the bottom of the skillet. Allow the wine to cook off for about 2-3 minutes or until reduced by half.

Step 5

Pour in the beef or vegetable broth and bring the mixture to a simmer. Let it cook for 3-4 minutes to enhance the flavors.

Step 6

Reduce the heat to low and stir in the heavy cream and fresh thyme leaves. Simmer the sauce for 3-5 minutes, stirring frequently, until it thickens slightly.

Step 7

Season with salt and black pepper to taste. Adjust the seasoning as needed.

Step 8

Remove the sauce from heat and garnish with freshly chopped parsley if desired. Serve warm over steak, chicken, pasta, or roasted vegetables.
