  • 8 large eggs
  • 2 cups whole milk

  • 1 cup baby spinach, roughly chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic cloves, minced
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 0.5 teaspoon dried thyme
  • 1 tablespoon (for greasing) butter

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter and set aside.

Step 2

Heat olive oil in a skillet over medium heat. Add the diced onion and garlic, cooking until softened and fragrant, about 3 minutes.

Add the diced bell peppers and cook for an additional 3-4 minutes until they begin to soften.
