Ingredients

  • 1 piece Pie crust (9-inch)
  • 5 large Eggs
  • 1 cup Whole milk
  • 0.5 cup Heavy cream
  • 6 slices Bacon
  • 0.5 cup Yellow onion
  • 2 cups Fresh spinach leaves
  • 1 cup Sharp cheddar cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 0.75 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Ground nutmeg

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

If using a refrigerated pie crust, allow it to come to room temperature. Roll the crust out into a 9-inch pie pan, pressing it gently into the bottom and up the sides. Trim any excess dough and set aside.

Step 3

In a large skillet over medium heat, cook the bacon slices until crispy. Transfer them to a plate lined with paper towels to drain, then crumble the bacon into small pieces.

Step 4

In the same skillet, add the diced onion and sauté until softened, about 3-4 minutes. Add the fresh spinach and cook until wilted, about 2 minutes. Remove the skillet from heat and let the mixture cool slightly.

Step 5

In a large mixing bowl, whisk together the eggs, milk, heavy cream, salt, pepper, and nutmeg until well combined.

Step 6

Layer the crumbled bacon, sautéed onion and spinach mixture, shredded cheddar cheese, and grated Parmesan cheese evenly into the prepared pie crust.

Step 7

Pour the egg mixture over the filling, ensuring it is evenly distributed.

Step 8

Carefully transfer the quiche to the preheated oven and bake for 35-40 minutes, or until the top is golden brown and the center is just set. If the crust edges begin to brown too quickly, cover them with aluminum foil during baking.

Step 9

Once cooked, remove the quiche from the oven and allow it to cool for 10 minutes before slicing. Serve warm or at room temperature.
