Ingredients

  • 4 large eggs
  • 2 tablespoons whole milk
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon butter
  • 2 bacon strips
  • 0.5 small red bell pepper, diced
  • 0.5 small onion, diced
  • 0.5 cup button mushrooms, sliced
  • 0.5 cup baby spinach leaves
  • 0.5 cup shredded cheddar cheese

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined. Set aside.

Step 2

Cook the bacon in a non-stick skillet over medium heat until crispy. Remove and place on a paper towel-lined plate to drain excess grease, then chop the bacon into bite-sized pieces.

Step 3

Drain most of the bacon fat from the skillet, leaving about 1 teaspoon. Add the butter to the skillet and melt over medium heat.

Add the diced red bell pepper, onion, and mushrooms to the skillet. Sauté for 3-4 minutes, or until the vegetables are softened.
