Ingredients

  • 3 cups Whole milk
  • 0.75 cups Granulated sugar
  • 3 tablespoons Cornstarch
  • 0.25 teaspoons Salt
  • 4 pieces Large egg yolks
  • 2 tablespoons Unsalted butter
  • 2 teaspoons Pure vanilla extract

Directions

Step 1

In a medium-sized saucepan, whisk together the sugar, cornstarch, and salt until combined.

Step 2

Gradually add the milk to the saucepan while whisking to dissolve the dry ingredients completely.

Step 3

In a small bowl, lightly whisk the egg yolks to break them up. Set aside.

Step 4

Place the saucepan over medium heat and cook the milk mixture, stirring constantly, until it begins to thicken and bubble. This will take about 6-8 minutes.

Step 5

Once thickened, remove about 1/2 cup of the hot milk mixture and gradually whisk it into the bowl with the egg yolks to temper them. This prevents the eggs from scrambling.

Step 6

Slowly pour the tempered egg mixture back into the saucepan while continuously whisking.

Step 7

Return the saucepan to medium heat and cook for another 2-3 minutes, whisking constantly, until the pudding is thick enough to coat the back of a spoon.

Step 8

Remove the saucepan from heat and stir in the butter and vanilla extract until fully incorporated.

Step 9

Pour the pudding into serving dishes or a large bowl. Press a piece of plastic wrap directly onto the surface of the pudding to prevent a skin from forming.

Step 10

Let it cool to room temperature, then refrigerate for at least 2 hours to set. Serve chilled with your favorite toppings or plain.
