Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 medium onion
  • 1 medium carrot
  • 2 garlic cloves
  • 1 cup breadcrumbs
  • 0.5 cup milk
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Finely dice the onion and carrot. Mince the garlic cloves. Set aside.

Step 3

In a large skillet over medium heat, sauté the diced onion, carrot, and minced garlic for 4-5 minutes, or until softened. Remove from heat and let cool slightly.

Step 4

In a large mixing bowl, combine the ground beef, ground pork, sautéed vegetables, breadcrumbs, milk, eggs, Worcestershire sauce, dried parsley, salt, and black pepper.

Step 5

Mix the ingredients gently with your hands until just combined. Avoid overmixing to keep the meatloaf tender.

Step 6

Transfer the mixture to a greased 9x5-inch loaf pan, pressing gently to shape it evenly.

Step 7

In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to make the glaze.

Step 8

Spread half of the glaze evenly over the top of the meatloaf.

Step 9

Bake the meatloaf in the preheated oven for 45 minutes. Remove it from the oven and spread the remaining glaze on top.

Step 10

Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).

Step 11

Allow the meatloaf to rest for 10 minutes before slicing and serving.
