  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch casserole dish with cooking spray or olive oil.

Wash and prepare the vegetables: slice the zucchini, yellow squash, and red bell pepper into thin rounds; halve the cherry tomatoes, and set aside the baby spinach.
