Pour the whole milk into a large, heavy-bottomed pot and place it over medium heat.
Heat the milk gently, stirring occasionally to prevent scorching, until it reaches about 180°F (82°C). Use a food thermometer to monitor the temperature. Do not let it boil.
Once the milk is at 180°F, turn off the heat and slowly add the vinegar or lemon juice, stirring gently. You will see the milk begin to curdle as the solids (curds) separate from the liquid (whey).
Let the mixture sit undisturbed for 10 minutes to allow the curds to fully form.
Line a large colander with a clean cheesecloth or thin kitchen towel and place it over a large bowl to catch the whey.
Carefully pour the curdled milk into the cheesecloth-lined colander. Let it drain for about 10-15 minutes, or until the cheese reaches your desired texture (longer draining will yield a firmer cheese).
Once drained, gather the edges of the cheesecloth and gently press to remove any excess whey.
Transfer the cheese to a bowl and sprinkle with salt. Stir well to incorporate. Taste and adjust the salt if needed.
Serve immediately, or transfer the cheese to an airtight container and refrigerate. It will keep in the fridge for up to 5 days.
